Recipe of the Month - Quesadillas

Quesadillas are often served as an appetizer rather than a main course. But, this Mexican fare has become popular as of late as people turn to a healthier, lighter style of cooking. Well, as men, you are looking for something easy to make for dinner that requires little effort yet tastes great. If you have 15 minutes then you have dinner with this recipe. The best thing about quesadillas is that you can adjust them to your taste. So, add this Mexican dish to your Bacon's list of easy recipes for today's man.
Quesadillas
Whats-a-dillas? Ingredients:
6 flour tortillas (about 8 to 10 inches in diameter)
2 cups of shredded cheddar cheese or Monterey jack cheese
1/2 cup chopped tomato
1 cooked chicken breast, sliced thinly
1/3 cup chopped onion or green onion (optional)
1 tbsp chopped jalapeno peppers (optional)
1/4 cup cooked, chopped bacon (optional)
1/4 cup chopped, green peppers (optional)

Garnish
chopped cilantro or parsley as a garnish
1/2 cup sour cream
1/2 cup salsa
Directions:
BBQ or skillet fry your breast of chicken. (If you decide to skillet fry the chicken, then slice and fry on medium to high heat in 3 tbsp of oil for about 10 minutes, turning every so often.)

Heat oven to 350F. Sprinkle the cheese evenly over the tortillas. Top with the remaining chosen ingredients. Fold the tortilla over the filling. Place on an un-greashed cookie sheet.

Bake for about 5 minutes or until the cheese has just melted.

Serve whole or sliced in half with sour cream and salsa as your toppers. Serves 6.
